- - Grape Tree Premium Mixed Fruit 500g & 1kg
- 95 Ml Dr. Oetker Large Vanilla Extract
- - Anchor Salted Butter 200g
- - Schwartz Ground Nutmeg
- 1 Kg White Granulated Sugar
- 1 Kg Heera Maida Flour,1kg
- 750 G Top-Op Table Salt Drums
Instructions
- Preheat your oven to 150°C (300°F) and line a deep cake tin with parchment paper.
- In a large mixing bowl, sift together 250g of flour and a pinch of salt. Set aside.
- In a saucepan, melt 200g of butter over low heat. Once melted, add 200g of sugar and stir until the sugar dissolves completely.
- Gradually add 4 beaten eggs to the butter and sugar mixture, whisking continuously to prevent curdling.
- Stir in 1 teaspoon of vanilla extract for flavor.
- In a separate bowl, combine 500g of mixed fruit and 100g of soft pitted apricots (chopped into small pieces).
- Add 1 teaspoon of ground nutmeg, 1 teaspoon of ground ginger, 1 teaspoon of ground cloves, and 1 teaspoon of ground cinnamon to the mixed fruit. Toss to coat the fruit evenly with the spices.
- Fold the spiced fruit mixture into the wet ingredients (butter, sugar, and eggs).
- Dissolve 1 teaspoon of food-grade baking soda (ensure it is safe for consumption) in 2 tablespoons of warm water. Add this to the wet mixture and stir well.
- Gradually fold the sifted flour and salt mixture into the wet ingredients, mixing gently until just combined. Be careful not to overmix.
- Pour the batter into the prepared cake tin, smoothing the top with a spatula.
- Bake in the preheated oven for 2.5 to 3 hours, or until a skewer inserted into the center comes out clean.
- Once baked, remove the cake from the oven and allow it to cool in the tin for 15 minutes before transferring it to a wire rack to cool completely.
