  • 100 G East End Ground Coriander
  • 1 Kg Fresh Onion Pack. 1kg - Ofoodi African Store
  • 100G Borwicks Bicarbonate Of Soda, 100G
  • 280G Caprichos Del Paladar Roasted Chopped Tomatoes, 280G
  • 500G Natco Dried Chickpeas, 500G
  • 450G Onken Natural Set Yogurt
  • 100 G Rajah Garam Masala
  • - Chilli Powder Rajah
  • 100 G Saras Turmeric Haldi Powder
  • 1 L Crisp N Dry Oil
  • 750 G Top-Op Table Salt Drums
  • 1.5 Kg Matthews Cotswold Organic Plain Flour, 1.5Kg
  • 190G Natco Garlic & Ginger Paste, 190G

Instructions

  1. 1. Soak 1 cup of chickpeas in salted water overnight in water. Drain and rinse the chickpeas.
  2. 2. In a pressure cooker, add the soaked chickpeas, 2 cups of water, 1/2 tsp salt, and 1 tea bag (for color). Pressure cook for 4-5 whistles or until the chickpeas are soft.
  3. 3. Heat 2 tbsp oil in a pan. Add 1 tsp cumin seeds and let them splutter. Add 1 finely chopped onion and sauté until golden brown.
  4. 4. Add 1 tbsp garlic & ginger paste and sauté for 1-2 minutes. Add 2 finely chopped roasted chopped tomatoes and cook until they turn mushy.
  5. 5. Add 1 tsp turmeric powder, 1 tsp red chili powder, 1 tsp coriander powder, 1 tsp cumin powder, 1 tsp garam masala, and 1/2 tsp amchur (dry mango powder). Mix well.
  6. 6. Add the cooked chickpeas (without the tea bag) to the pan. Mix well and simmer for 10-15 minutes. Adjust salt and spices as needed. Garnish with chopped coriander leaves.
  7. 7. For the bhature, mix 1 cup organic plain flour, 1/4 cup semolina, 1/4 tsp baking powder, 1/4 tsp bicarbonate of soda, 1/2 tsp sugar, 1/2 tsp salt, and 1 tbsp oil in a bowl.
  8. 8. Add 1/4 cup curd and enough water to make a soft dough. Knead well and let it rest for 2 hours.
  9. 9. Divide the dough into small balls. Roll each ball into a round or oval shape using a rolling pin.
  10. 10. Heat oil in a deep pan. Fry the rolled bhature until they puff up and turn golden brown on both sides.
  11. 11. Serve the hot chole with bhature, accompanied by sliced onions, green chutney, and pickle.
