Ingredients
- 1 Unit Organic Cabbage White 1 Unit
- - Ching'S Egg Hakka Noodles
- 1 Kg Carrots - 1kg
- 1kg 1kg Green Pepper
- 1 Bunch Spring Onions 1 Bunch
- 500 G Brown & Polson Cornflour
- 1 L Crisp N Dry Oil
- - Dark Soy Sauce
Instructions
- 1. Begin by preparing the vegetables. Wash and finely shred the cabbage, carrots, and green pepper. Slice the onions and chop the spring onions into small pieces, keeping the green and white parts separate.
- 2. Boil the egg noodles according to the package instructions. Once cooked, drain the noodles and allow them to cool completely.
- 3. Heat cooking oil in a deep frying pan or wok. Once the oil is hot, take small portions of the cooked noodles and deep fry them until they are golden brown and crispy. Remove and set aside on a paper towel to drain excess oil.
- 4. In a separate bowl, mix 2 tablespoons of cornflour with 1/4 cup of water to create a smooth slurry. Set this aside for thickening the sauce later.
- 5. Heat 2 tablespoons of cooking oil in a wok or large pan over medium heat. Add the sliced onions and stir-fry until translucent.
- 6. Add the shredded carrots, green pepper, and cabbage to the wok. Stir-fry the vegetables on high heat for 3-4 minutes, ensuring they remain crisp and retain their color.
- 7. Add salt to taste and mix well.
- 8. Pour in 2 cups of water or vegetable stock and bring the mixture to a boil.
- 9. Gradually add the cornflour slurry to the boiling mixture, stirring continuously to avoid lumps. Cook for 2-3 minutes until the sauce thickens to your desired consistency.
- 10. Add the crispy fried noodles to a serving plate or bowl. Pour the prepared vegetable sauce over the noodles.
- 11. Garnish with the chopped green parts of the spring onions and serve immediately for a delicious and authentic Chinese Chopsuey experience.
