Instructions
- 1. Preheat your oven to 220°C (200°C fan) and line a baking tray with parchment paper for the zucchini fries.
- 2. Slice the zucchini into thin strips (about 1 cm thick) to resemble fries. Set them aside.
- 3. Prepare the breading for the zucchini fries: In one bowl, whisk 2 large eggs. In a second bowl, mix breadcrumbs, grated Parmesan, smoked paprika, garlic powder, salt, and black pepper.
- 4. Dip each zucchini strip into the beaten eggs, then coat thoroughly in the breadcrumb mixture. Place the breaded zucchini strips onto the prepared baking tray.
- 5. Bake the zucchini fries in the preheated oven for 20-25 minutes, flipping halfway through, until golden and crispy.
- 6. While the fries bake, prepare the burger patties: In a large bowl, mix minced beef, onion powder, garlic powder, salt, and black pepper. Divide into 4 equal portions and shape into patties roughly 2 cm thick.
- 7. Heat a large frying pan or griddle over medium-high heat and add a drizzle of vegetable oil. Cook the burger patties for 4-5 minutes per side, or until browned and cooked through.
- 8. During the last minute of cooking, place a slice of cheddar cheese on top of each patty and cover the pan with a lid to melt the cheese.
- 9. Toast the burger buns lightly in the same pan or under a grill for 1-2 minutes.
