  • 200 G Amul Fresh Malai Paneer 200 G
  • 500 G Fresh Vine Tomato 500g
  • - Greenfields Ground Coriander
  • 200G Arla Lactofree Mature Cheddar Cheese
  • 200G Anchor Unsalted Butter
  • 1 L Crisp N Dry Oil
  • 1 Kg Caputo Manitoba Flour, 1Kg
  • 190G Natco Garlic & Ginger Paste, 190G
  • 100G Trs Chilli Powder 100G

Instructions

  1. 1. Heat cooking oil and unsalted butter in a wok over medium heat. Add cumin seeds and allow them to crackle. Stir in the garlic & ginger paste and sauté for about a minute until fragrant.
  2. 2. Add finely chopped onions to the wok and cook until they turn translucent. Then, add tomato puree, cashew paste, salt, red chili powder, and ground coriander. Cook the mixture for 7-8 minutes, stirring occasionally, until the oil separates and the gravy thickens.
  3. 3. Add Kasuri methi (fenugreek leaves) and garam masala to the gravy. Mix well, then stir in plant-based double cream and freshly chopped coriander leaves. Combine thoroughly and set the tikka masala gravy aside.
  4. 4. In a mixing bowl, add paneer cubes and coat them with the prepared tikka masala gravy. Place a small piece of live charcoal in a heatproof bowl or foil, add a few drops of clarified butter to the charcoal, and place it in the center of the mixing bowl. Cover the bowl immediately to allow the paneer to absorb the smoky flavor for 4-5 minutes. Remove the charcoal and set the smoked paneer aside.
  5. 5. Prepare dough using Manitoba flour according to package instructions and roll it out into thin slices. Place a slice of lactofree mature cheddar cheese on one dough slice, top it with another dough slice, and press gently to seal. Spread a layer of the tikka masala gravy on top, then grate some more lactofree mature cheddar cheese over it. Top with smoked paneer cubes, diced bell peppers, and onions.
  6. 6. Heat unsalted butter in a pan over medium-low heat and toast the prepared dough squares for 4-5 minutes until golden and crisp. Alternatively, bake them in a preheated oven at 250°C for 5-7 minutes until the cheese melts and the dough is crisp.
