Ingredients

  • Pack Tray Of 30 Medium Free Range Eggs
  • 1 Kg Carrots - 1kg
  • - Wholefood Earth Thompson Seedless Raisins
  • 95 Ml Dr. Oetker Large Vanilla Extract
  • - Anchor Salted Butter 200g
  • 170G Dr. Oetker Baking Powder 170g
  • 1 Kg Tate & Lyle Granulated Sugar 1Kg
  • NaN Mcdougalls Self Raising Flour
  • - Natco Ground Cinnamon 100g

Instructions

  1. 1. Preheat your oven to 180°C (350°F). Grease two 8-inch round cake pans with butter or olive oil. Line the bottoms with parchment paper for easy removal.
  2. 2. In a large mixing bowl, sift together the dry ingredients: 2 cups of flour, 2 teaspoons of baking powder, and 1 teaspoon of ground cinnamon.
  3. 3. In a separate bowl, whisk together the wet ingredients: 3 eggs, 1 cup of sugar, 1/2 cup of melted butter, 1/4 cup of olive oil, and 1 teaspoon of vanilla extract. Mix until smooth and well combined.
  4. 4. Gradually add the wet ingredients to the dry ingredients, stirring gently until a smooth batter forms. Avoid overmixing to ensure a tender cake.
  5. 5. Peel and grate carrots (about 2 cups grated) and fold them into the batter along with 1/2 cup of raisins. Ensure the carrots and raisins are evenly distributed throughout the batter.
  6. 6. Divide the batter evenly between the prepared cake pans and smooth the tops with a spatula.
  7. 7. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
  8. 8. Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then transfer them to a wire rack to cool completely before frosting or serving.
  9. 9. Optional: Decorate the cooled cakes with your favorite frosting or toppings, such as cream cheese frosting, chopped nuts, or additional raisins.
