  • 250G Captain Cook Dry Salted Skinless & Boneless Salt Fish
  • - Maldon Sea Salt
  • 100G East End Black Pepper Whole
  • 750 Ml Mr Organic Sunflower Oil
  • 500G Tate & Lyle Fairtrade Fondant Icing Sugar

Instructions

  1. 1. Begin by preparing the Captain Cook Dry Salted Skinless & Boneless Salt Fish fillets (approximately 300g). Pat them dry with a paper towel and season both sides with a pinch of sea salt and freshly ground black pepper. Let them sit for 10 minutes to allow the seasoning to penetrate.
  2. 2. Peel and julienne the Fresh Asian Mooli Radish Daikon into thin strips. Set aside.
  3. 3. In a small bowl, prepare the sauce by mixing 1/4 cup of tamari gluten-free soy sauce, 2 tablespoons of mirin-style sweet cooking seasoning, 1 tablespoon of Takara Cooking Sake - Ryori Shu, and 1 teaspoon of fairtrade fondant icing sugar. Stir until the sugar dissolves completely.
  4. 4. Heat 1 tablespoon of sunflower oil in a non-stick pan over medium heat. Once the oil is hot, place the fish fillets skin-side down and sear for 2-3 minutes until the skin is crispy and golden brown.
  5. 5. Flip the fish fillets and cook for another 2-3 minutes until the fish is cooked through. Remove the fillets from the pan and set aside on a plate.
  6. 6. In the same pan, add the julienned daikon radish and stir-fry for 1-2 minutes until it begins to soften slightly.
  7. 7. Pour the prepared sauce into the pan with the daikon radish and bring it to a gentle simmer. Cook for 1-2 minutes, stirring occasionally, until the sauce slightly thickens and coats the daikon.
  8. 8. Return the seared fish fillets to the pan, placing them on top of the daikon. Spoon the sauce over the fish and let them cook together for 1 minute to absorb the flavors.
  9. 9. Transfer the fish fillets and daikon to a serving plate. Garnish with thinly sliced green onions (optional) and serve hot with steamed rice or your preferred side dish.
