Instructions
- 1. Preheat your oven to 200°C (400°F) and lightly grease a baking dish large enough to hold the chicken pieces in a single layer.
- 2. In a small saucepan over medium heat, combine the bourbon, brown sugar, Dijon mustard, soy sauce, apple cider vinegar, garlic, smoked paprika, and black pepper. Stir until the sugar dissolves and the mixture begins to simmer, about 3-4 minutes. Remove from heat and set aside to cool slightly.
- 3. Pat the chicken thighs dry with paper towels and season both sides with salt and pepper.
- 4. Heat the olive oil in a large skillet over medium-high heat. Sear the chicken thighs skin-side down for 3-4 minutes until golden brown and crisp. Flip and sear the other side for another 2 minutes. Transfer the chicken to the prepared baking dish, skin-side up.
- 5. Pour the bourbon glaze over the chicken, making sure to coat each piece evenly.
- 6. Bake the chicken in the preheated oven for 20-25 minutes, basting with the glaze every 7-8 minutes, until the chicken is cooked through and reaches an internal temperature of 75°C (165°F).
- 7. Once cooked, remove the chicken from the oven and let it rest for 5 minutes. Spoon any remaining glaze from the baking dish over the chicken before serving.
- 8. Garnish with chopped fresh parsley and serve warm with your choice of sides, such as mashed potatoes, roasted vegetables, or a crisp green salad.
