Instructions

  1. 1. Wash and peel the potatoes. Boil them in salted water until tender, then mash them and set aside.
  2. 2. Heat 2 tablespoons of garlic chili oil in a pan over medium heat. Add mustard seeds and cumin, allowing them to sizzle and release their aroma.
  3. 3. Add a pinch of asafoetida to the pan, followed by finely chopped onion. Sauté until the onions turn golden brown.
  4. 4. Stir in turmeric powder, red chili powder, and salt. Mix well to combine the spices.
  5. 5. Add diced tomatoes and cook until softened. Then, add the mashed potatoes and mix thoroughly to create the masala filling. Adjust seasoning if needed.
  6. 6. Drain and rinse canned butter beans, then add them to the masala mixture. Cook for 2-3 minutes, ensuring the beans are well incorporated.
  7. 7. Slice the cucumber into thin rounds and set aside for garnish.
  8. 8. Toast slices of bread until golden and crisp.
  9. 9. Spread the prepared masala filling generously onto one side of the toasted bread slices. Top with cucumber slices for added freshness.
  10. 10. Serve the Bombay Masala Toast warm, optionally garnished with additional chopped onions or tomatoes for extra flavor.
