Instructions

  1. 1. Heat 2 tablespoons of olive oil in a large pot over medium heat.
  2. 2. Add the chopped onion and minced garlic, sauté for 3 minutes until softened and fragrant.
  3. 3. Increase the heat to high and add the ground beef. Cook for 5-7 minutes, stirring frequently, until browned and no longer pink.
  4. 4. Stir in the chili powder, cumin, smoked paprika, and cayenne pepper, and cook for 1 minute to toast the spices.
  5. 5. Add the diced tomatoes, tomato paste, beef stock, and kidney beans to the pot. Stir well to combine.
  6. 6. Reduce the heat to low, cover the pot, and simmer for 45 minutes, stirring occasionally to prevent sticking.
