- 750G Wholegood Organic Rainbow Carrots
- - Red Sweet Potato
- 100 G Jumbo Garlic 100g
- - Filippo Berio Garlic Flavoured Olive Oil
- - Dolls House Miniature Handmade Parmesan Cheese Wheel
- 50G Picard Chopped Flat Parsley
- 100G Terre Exotique Winemaker'S Salt, 100G
- 500G Cracked Black Pepper Catering Size, 500G
- 150G Saitaku Panko Breadcrumbs
Instructions
- 1. Preheat your oven to 400°F (200°C).
- 2. In a large mixing bowl, combine 2 lbs of lamb, 4 medium carrots (peeled and chopped), 3 medium sweet potatoes (peeled and cubed), 6 cloves of garlic (minced), 1/4 cup olive oil, 1/2 cup panko breadcrumbs, 1/4 cup grated parmesan cheese, 1/4 cup chopped parsley, 1 tbsp salt, and 1/2 tsp black crushed pepper. Mix well to coat everything evenly.
- 3. Transfer the mixture to a large baking or roasting pan, spreading it out evenly.
- 4. Cover the pan with aluminum foil and bake in the preheated oven for 1 hour.
- 5. Remove the foil and bake for an additional 15 minutes to allow the lamb and vegetables to develop a golden crust.
- 6. Remove from the oven and let rest for 5 minutes. Garnish with additional fresh parsley before serving.
