Instructions
- 1. Preheat your oven to 325°F (160°C).
- 2. In a large saucepan, combine the apple vinegar, half a jar (500g) of dark brown sugar, cinnamon sticks, a few nutmeg shavings, rosemary, and thyme leaves. Bring this mixture to a gentle simmer over medium heat.
- 3. Allow the mixture to reduce by half, then remove from heat and set aside to cool slightly.
- 4. Place the slices of ham into a large roasting tray.
- 5. Using a sharp knife, score the surface of the ham in a diamond pattern and stud each intersection with cloves.
- 6. Brush the cooled spice glaze generously over the ham.
- 7. Drizzle molasses over the ham and sprinkle the remaining dark brown sugar on top to form a crust.
