Instructions

  1. 1. Preheat your oven to 325°F (160°C).
  2. 2. In a large saucepan, combine the apple vinegar, half a jar (500g) of dark brown sugar, cinnamon sticks, a few nutmeg shavings, rosemary, and thyme leaves. Bring this mixture to a gentle simmer over medium heat.
  3. 3. Allow the mixture to reduce by half, then remove from heat and set aside to cool slightly.
  4. 4. Place the slices of ham into a large roasting tray.
  5. 5. Using a sharp knife, score the surface of the ham in a diamond pattern and stud each intersection with cloves.
