Instructions

  1. 1. Preheat your oven to 200°C (fan 180°C) or gas mark 6. Line a large baking tray with parchment paper for easy cleanup.
  2. 2. Prepare the BBQ-apricot glaze by combining apricot jam, barbecue sauce, Dijon mustard, and apple cider vinegar in a small saucepan. Heat over medium-low heat for 3-4 minutes, stirring occasionally, until smooth and slightly thickened. Set aside.
  3. 3. In a large mixing bowl, combine minced pork, breadcrumbs, finely chopped onion, minced garlic, egg, smoked paprika, salt, and black pepper. Mix thoroughly until all ingredients are evenly distributed.
  4. 4. Divide the pork mixture into four equal portions and shape each into individual meatloaves (oval-shaped patties) about 2-3 cm thick. Place the meatloaves on the prepared baking tray.
  5. 5. Brush each meatloaf generously with the apricot BBQ glaze, ensuring the top and sides are well coated. Reserve some glaze for basting later.
  6. 6. Bake the meatloaves in the preheated oven for 20 minutes. Remove from the oven, brush with the remaining glaze, and return to the oven for an additional 10 minutes, or until the internal temperature of the meatloaves reaches 74°C.
