Instructions
- 1. Preheat your oven to 220°C (200°C fan). Score the pork skin in a crisscross pattern, ensuring you cut through the skin but not the meat. Rub coarse sea salt, black pepper, and paprika into the skin and meat.
- 2. Place the pork belly skin-side up on a baking tray. Drizzle with olive oil and roast in the oven for 30 minutes to crisp up the skin.
- 3. Reduce the oven temperature to 180°C (160°C fan) and continue cooking for another 40 minutes, or until the meat is tender and the crackling is golden and crispy.
- 4. While the pork is roasting, prepare the mustard mayo by mixing wholegrain mustard and mayonnaise in a small bowl. Set aside.
- 5. Toss the mixed salad leaves, sliced tomato, shredded red cabbage, and white vinegar in a bowl to create a fresh and tangy salad base.
- 6. When the pork belly is fully cooked, let it rest for 10 minutes before slicing into thin strips.
- 7. Slice the ciabatta rolls in half and lightly toast them. Spread a generous layer of mustard mayo on each side.
- 8. Assemble the sandwiches by layering the salad mix and sliced pork belly onto the toasted ciabatta. Top with the crispy crackling.
