Instructions

  1. 1. Preheat your oven to 220°C (200°C fan). Score the pork skin in a crisscross pattern, ensuring you cut through the skin but not the meat. Rub coarse sea salt, black pepper, and paprika into the skin and meat.
  2. 2. Place the pork belly skin-side up on a baking tray. Drizzle with olive oil and roast in the oven for 30 minutes to crisp up the skin.
  3. 3. Reduce the oven temperature to 180°C (160°C fan) and continue cooking for another 40 minutes, or until the meat is tender and the crackling is golden and crispy.
  4. 4. While the pork is roasting, prepare the mustard mayo by mixing wholegrain mustard and mayonnaise in a small bowl. Set aside.
  5. 5. Toss the mixed salad leaves, sliced tomato, shredded red cabbage, and white vinegar in a bowl to create a fresh and tangy salad base.
