Instructions

  1. 1. Preheat your oven to 180°C (350°F) and lightly grease a medium-sized baking dish.
  2. 2. Heat 2 tbsp of olive oil in a large skillet over medium-high heat. Season the beef strips with salt and pepper, then sear them for 2-3 minutes per side until browned. Remove the beef and set aside.
  3. 3. In the same skillet, reduce the heat to medium and add the remaining 1 tbsp of olive oil. Sauté the onions and garlic for 3-4 minutes until softened and fragrant.
  4. 4. Add the sliced mushrooms to the skillet and cook for 5-6 minutes until they release their moisture and turn golden. Stir in the thyme and rosemary.
  5. 5. Deglaze the skillet by pouring in the white wine, scraping up any browned bits from the bottom of the pan. Allow the wine to simmer for 2-3 minutes until slightly reduced.
  6. 6. Stir in the double cream and Dijon mustard, mixing well. Cook for another 2-3 minutes until the sauce thickens slightly.
  7. 7. Return the seared beef to the skillet and toss to coat in the creamy sauce. Transfer the mixture to the prepared baking dish.
  8. 8. Sprinkle the grated Gruyère cheese evenly over the top of the beef mixture. Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
  9. 9. Remove the dish from the oven and let it rest for 5 minutes before serving. Garnish with fresh parsley for a burst of color and flavor.
  10. 10. Serve hot with buttered noodles, mashed potatoes, or crusty bread to soak up the creamy sauce.
