Instructions
- 1. Preheat your oven to 180°C (350°F) and lightly grease a medium-sized baking dish.
- 2. Heat 2 tbsp of olive oil in a large skillet over medium-high heat. Season the beef strips with salt and pepper, then sear them for 2-3 minutes per side until browned. Remove the beef and set aside.
- 3. In the same skillet, reduce the heat to medium and add the remaining 1 tbsp of olive oil. Sauté the onions and garlic for 3-4 minutes until softened and fragrant.
- 4. Add the sliced mushrooms to the skillet and cook for 5-6 minutes until they release their moisture and turn golden. Stir in the thyme and rosemary.
- 5. Deglaze the skillet by pouring in the white wine, scraping up any browned bits from the bottom of the pan. Allow the wine to simmer for 2-3 minutes until slightly reduced.
- 6. Stir in the double cream and Dijon mustard, mixing well. Cook for another 2-3 minutes until the sauce thickens slightly.
- 7. Return the seared beef to the skillet and toss to coat in the creamy sauce. Transfer the mixture to the prepared baking dish.
- 8. Sprinkle the grated Gruyère cheese evenly over the top of the beef mixture. Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
- 9. Remove the dish from the oven and let it rest for 5 minutes before serving. Garnish with fresh parsley for a burst of color and flavor.
- 10. Serve hot with buttered noodles, mashed potatoes, or crusty bread to soak up the creamy sauce.
