- 100 G Rajah Garam Masala
- 250G Tilda Wholegrain Basmati Rice 250g
- 100 G Trs Ground Cumin Jeera Powder
- - Maldon Flakes Sea Salt
- - Biona Capers In Olive Oil
- 1 piece Yellow Bell Pepper
- 250 G Bwfo Ginger Root Dried Cut
- 50G Black Garlic Cloves, 50G
- 250 Ml Trs Lemon Juice 250Ml
- 1 Bunch Coriander - Bunch
Instructions
- 1. Rinse the basmati rice thoroughly under cold water and soak for 15 minutes.
- 2. Chop the lamb chunks into bite-sized pieces and season with curry blend, cumin powder, and sea salt.
- 3. Heat olive oil in an air fryer pan insert for 2 minutes, then add the lamb chunks and cook at 200°C for 12 minutes, stirring halfway.
- 4. While the lamb cooks, finely chop the red pepper and grate the ginger and garlic.
- 5. In a medium pot, heat 5 ml olive oil and sauté the ginger, garlic, and red pepper until fragrant, about 3 minutes.
- 6. Drain the soaked rice and add it to the pot with 300 ml water and a pinch of salt; bring to a boil.
- 7. Reduce heat to low, cover, and simmer the rice for 12 minutes or until fully cooked.
- 8. Once the lamb is cooked, transfer it to a plate and drizzle with lemon juice for added zest.
- 9. Fluff the rice with a fork and stir in freshly chopped coriander for a burst of flavor.
- 10. Serve the spiced lamb over the fragrant masala rice and garnish with additional coriander if desired.
