Instructions

  1. 1. In a bowl, combine mutton cubes, olive oil, lemon juice, minced garlic, chopped basil, salt, and pepper. Mix well to coat evenly.
  2. 2. Cover the bowl and let the mutton marinate in the fridge for at least 10 minutes while you prepare other ingredients.
  3. 3. Rinse the long-grain rice under cold water until the water runs clear to remove excess starch.
  4. 4. In a medium pot, bring the vegetable stock to a boil and add the rice. Reduce heat, cover, and simmer for 12 minutes until cooked.
  5. 5. Peel and slice the carrots into thin rounds. Slice the cucumber into thin rounds as well and set aside for serving.
  6. 6. Heat an air fryer to 200°C. Place the marinated mutton cubes into the basket in a single layer and cook for 12-15 minutes, shaking midway for even cooking.
  7. 7. Once the rice is done, fluff with a fork and mix in a pinch of Greenfields Berbere Spice Blend for added flavor.
  8. 8. Arrange the herbed rice on plates and top with the grilled mutton cubes.
  9. 9. Serve with a side of fresh carrot and cucumber slices for a refreshing crunch.
