  1. 1. Peel and dice the chayote squash into small cubes for even cooking.
  2. 2. Finely chop the onion and garlic, ensuring they are ready for sautéing.
  3. 3. Heat olive oil in a large pot over medium heat, then sauté the onion and garlic until fragrant and softened.
  4. 4. Add the diced chayote to the pot and stir to coat with the fragrant onion and garlic mixture.
  5. 5. Pour in the vegetable stock, ensuring the chayote is fully submerged, and bring to a gentle boil.
  6. 6. Reduce the heat to low and simmer the chayote until tender, about 15 minutes.
  7. 7. Carefully transfer the cooked chayote and stock to a blender and blend until smooth and creamy.
  8. 8. Return the blended soup to the pot and stir in the coconut milk for a luscious texture.
