Instructions
- 1. Peel and dice the chayote squash into small cubes for even cooking.
- 2. Finely chop the onion and garlic, ensuring they are ready for sautéing.
- 3. Heat olive oil in a large pot over medium heat, then sauté the onion and garlic until fragrant and softened.
- 4. Add the diced chayote to the pot and stir to coat with the fragrant onion and garlic mixture.
- 5. Pour in the vegetable stock, ensuring the chayote is fully submerged, and bring to a gentle boil.
- 6. Reduce the heat to low and simmer the chayote until tender, about 15 minutes.
- 7. Carefully transfer the cooked chayote and stock to a blender and blend until smooth and creamy.
- 8. Return the blended soup to the pot and stir in the coconut milk for a luscious texture.
- 9. Season the soup with salt and Thai white pepper powder, adjusting to taste.
- 10. Heat the soup gently for another 5 minutes, allowing the flavors to meld together.
- 11. Serve the soup warm, garnished with freshly chopped coriander if desired.
