Instructions
- 1. Preheat the oven to 350°F (175°C).
- 2. Heat a skillet over medium heat and sauté 1 cup diced green pepper and 1 cup diced onion in 1 tbsp olive oil until softened, about 5 minutes.
- 3. Add 1 tsp salt, 1/2 tsp black pepper, and 1/2 tsp smoked paprika to the skillet and stir to combine.
- 4. In a casserole dish, layer the sautéed vegetable mixture, 1 cup steamed string beans, and 1 cup tomato sauce.
- 5. Prepare the mashed topping by mashing 4 cups cooked mashed potato with 2 tbsp unsweetened almond milk and 1 tbsp olive oil until smooth. Season with 1/2 tsp salt.
- 6. Spread the mashed potato evenly over the vegetable layers in the casserole dish.
- 7. Bake in the preheated oven for 25-30 minutes, or until the topping is lightly browned and the casserole is heated through.
- 8. Remove from the oven and let cool for 5 minutes before serving.
