- 1 Litre Casa Marrazzo Sun Dried Tomatoes In Oil, 1 Litre
- 280G Dell'Ugo Fresh Tomato & Mascarpone Sauce
Instructions
- 1. Cook 1 lb tortellini according to the package directions. Drain and set aside.
- 2. In a medium heavy saucepan, combine 1/4 cup vegetable stock, 1 clove minced garlic, 1/2 cup chopped sun-dried tomatoes, 1/2 cup sliced mushrooms, 1/4 cup diced red bell pepper, and 1 tablespoon chopped parsley.
- 3. Bring the mixture to a boil over medium heat, then reduce to a simmer and cook for about 5 minutes until the vegetables are tender.
- 4. Remove the saucepan from heat and stir in 1/2 cup sour cream and 1/4 cup shredded cheddar cheese until well combined.
- 5. Toss the cooked tortellini with the vegetable and sauce mixture until evenly coated. Optionally, stir in 2 tablespoons chopped sun-dried tomatoes for added flavor.
- 6. Serve the dish warm as a main course or chill it in the refrigerator to serve as a light salad.
