- 1kg 1kg Green Pepper
- 425G Isle Of Wight Tomato Organic Large Vine
- - Cathedral City Mature Cheddar Cheese
- 60G Terre Exotique Cheeselovers Pepper, 60G
- 100 G Jumbo Garlic 100g
- - Forest Whole Foods Organic White Quinoa
- 100G Terre Exotique Winemaker'S Salt, 100G
Instructions
- 1. Preheat the oven to 400°F (200°C).
- 2. Spread 1 large potato, thinly sliced, on the bottom of a 9 x 13-inch baking pan.
- 3. Sprinkle 2 1/4 tsp salt, 1/4 tsp pepper, and 2 minced garlic cloves evenly over the potatoes.
- 4. Spread 3/4 cup uncooked quinoa over the potatoes.
- 5. In a skillet, sauté 500 g cooked quinoa with a pinch of salt until lightly browned, then spread it over the quinoa.
- 6. Arrange 2 onions, thinly sliced, over the tofu, followed by 2 green peppers, diced.
- 7. Pour 1 large tomato, diced, evenly over the layers, then add enough water to reach the level of the quinoa.
- 8. Lay slices of 200 g cheddar cheese on top of the mixture.
- 9. Bake at 400°F (200°C) for 40 to 45 minutes, then reduce the temperature to 350°F (175°C) and bake for an additional 40 minutes.
- 10. Remove from the oven and let the dish stand for 15 minutes before serving.
- 11. Serve warm and enjoy this comforting vegetarian meal.
