Instructions
- 1. In a bowl, combine 3 tablespoons organic golden flaxseed flour, 2 tablespoons finely chopped onion, and 1/4 teaspoon salt. Mix well.
- 2. Crumble 500 g plant-based meatballs over the mixture and mix thoroughly. Shape into 1-inch balls and place them on a greased rack in a shallow baking pan.
- 3. Bake the meatballs, uncovered, at 425°F for 10-12 minutes or until firm and lightly browned. Drain on paper towels.
- 4. Meanwhile, in a saucepan, heat 1 teaspoon butter over medium heat. Add 1/4 cup sliced mushrooms, 1/4 cup chopped celery, 3 tablespoons diced green pepper, and sauté until softened, about 5 minutes.
- 5. Stir in 1/2 cup tomato sauce, 2 tablespoons brown sugar, 2 tablespoons vegetable broth, 4 teaspoons lemon juice, and 1/8 teaspoon garlic powder. Bring to a boil, then reduce heat to low.
- 6. Add the baked meatballs to the sauce, cover, and simmer for 15 minutes or until heated through.
- 7. Serve the meatballs and vegetable sauce for a complete meal.
