Ingredients

  • 1 Kg Carrots - 1kg
  • 1kg 1kg Green Pepper
  • 125G Daylesford Organic Brandy Butter
  • 560G Yorkshire Provender Rustic Vegetable Broth With Lentils Kale & Quinoa
  • 700G Navarrico Lentejas - Brown Lentils, 700G
  • 60G Terre Exotique Cheeselovers Pepper, 60G
  • 500G White Pearl Italian Pudding Rice 500g
  • 2.5 Kg Casa Marrazzo Organic Chopped Tomatoes, 2.5Kg

Instructions

  1. 1. In a large saucepan, melt 2 tablespoons of butter over medium heat. Add 2 chopped onions, 4 diced carrots, and 1 diced green pepper. Saute for 5-7 minutes until the vegetables are softened.
  2. 2. Add 10 oz of vegetable broth and 2 cups of water to the saucepan. Bring the mixture to a boil.
  3. 3. Stir in 1 cup of lentils and 1/4 teaspoon of pepper. Reduce the heat to low, cover, and let it simmer for 25 minutes.
  4. 4. Add 1/2 cup of rice to the saucepan and stir well. Cover again and simmer for an additional 20 minutes, or until the rice is tender and the liquid is mostly absorbed.
  5. 5. Stir in 28 oz of chopped tomatoes and cook for another 5 minutes, allowing the flavors to meld and the liquid to be fully absorbed.
  6. 6. Remove from heat and let the pilaf rest for a few minutes before serving. Adjust seasoning if needed and serve warm.
