- 6 X 400G Cirio Polpa Finissima Finely Chopped Italian Tomatoes
- - Filippo Berio Garlic Flavoured Olive Oil
- 50G Pepper Black Ground BWFO
- 300G Pack'D Organic & Chopped Pineapple
- 250 Ml Kikkoman Less Salt Soy Sauce
- 300G Brown Sugar With Ginger, 300G
- 50 g Dry Ginger | Sukku | Sonth | Chukku | Sonti | Onashunti Powder 50G
- - Schwartz Garlic Powder 480g
Instructions
- 1. Drain 1 can of pineapple chunks, reserving 1/2 cup of the juice for the marinade.
- 2. In a large bowl, combine the pineapple chunks, 2 diced green peppers, 1 diced onion, 12 halved button mushrooms, and 2 diced tomatoes. Set aside.
- 3. In a small saucepan, mix the reserved pineapple juice, 1/2 cup soy sauce, 1/4 cup olive oil, 1 tablespoon brown sugar, 2 teaspoons ground ginger, 1 teaspoon garlic powder, and 1/4 teaspoon black pepper.
- 4. Bring the mixture to a boil over medium heat, then reduce the heat and simmer uncovered for 5 minutes, stirring occasionally.
- 5. Pour the marinade over the vegetable and pineapple mixture. Toss to coat evenly, cover, and refrigerate for 1 hour to allow the flavors to meld.
- 6. Preheat a grill or grill pan to medium-high heat. Thread the marinated vegetables and pineapple onto skewers.
- 7. Grill the skewers for 8-10 minutes, turning occasionally, until the vegetables are tender and slightly charred.
- 8. Serve the skewers warm as a delightful vegetarian dinner option.
