Ingredients
- 50G Picard Chopped Flat Parsley
- - Filippo Berio Garlic Flavoured Olive Oil
- 1 Kg Yellow/White Onion 1kg
- 1 stick Organic Celery Stick
- 500 Ml Daylesford Organic Hot & Sour Vegetable Broth
- 225G The Tofoo Co. Original Seitan
Instructions
- 1. Preheat your oven to 180°C (350°F).
- 2. Heat 2 tablespoons of olive oil in a large oven-safe pan over medium heat. Add the seitan and brown it on all sides for about 3-5 minutes.
- 3. Remove the browned protein from the pan and set it aside. Leave enough oil in the pan to prepare the base for the gravy.
- 4. Add 1 diced onion, 2 chopped celery stalks, and 1 bay leaf to the pan. Sauté for 5 minutes until the vegetables are softened and fragrant.
- 5. Stir in 3 tablespoons of catsup and 1 cup of vegetable broth. Mix well to combine.
- 6. Return the browned seitan to the pan, ensuring it is well-coated with the sauce. Cover the pan with a lid or foil.
- 7. Transfer the pan to the preheated oven and bake for 20-30 minutes, or until the protein is tender and the flavors are well-developed.
- 8. Remove the pan from the oven and garnish with 1 tablespoon of chopped fresh parsley before serving.
