Ingredients
- 6 X 400G Cirio Polpa Finissima Finely Chopped Italian Tomatoes
- 100 G Jumbo Garlic 100g

- 1 L So Good Natural Unsweetened Soy Beverage (Lactose-Free, Plant-Based / Vegan / Milk Alternative) - 1L
- 100G Terre Exotique Winemaker'S Salt, 100G
- 50G Pepper Black Ground BWFO
- 653G Mccain Baby Hasselback Potatoes Salt & Pepper
- - Filippo Berio Garlic Flavoured Olive Oil
- 1.5 Kg Bacheldre Organic Stoneground Strong Wholemeal Flour, 1.5Kg
- 50G Top-Op Nutmeg Powder 50g
- - Bart Allspice Ground 40g
- - Organic Dried Rosemary Hatton Hill Organic
Instructions
- 1. In a pot, combine 4 diced tomatoes, 4 minced garlic cloves, 1 chopped onion, 1 teaspoon salt, 1/2 teaspoon black pepper, and 2 teaspoons dried rosemary. Add 2 cups of water and simmer for 10 minutes.
- 2. Slice 1 large eggplant and 2 medium potatoes into rounds. Heat 1/2 cup olive oil in a pan and shallow fry the eggplant slices until golden. Repeat with the potato slices. Set aside on paper towels to drain excess oil.
- 3. To make the white sauce, heat 2 tablespoons olive oil in a small pot over medium heat. Gradually whisk in 2 tablespoons of whole wheat flour until smooth. Slowly add 2 1/2 cups unsweetened soymilk, stirring constantly. Season with a pinch of salt, 1/2 teaspoon black pepper, and a pinch of nutmeg. Simmer for 1 minute until thickened.
- 4. Preheat the oven to 375°F (190°C). Grease the base and sides of a casserole dish with olive oil. Layer half of the potato slices at the bottom, followed by half of the eggplant slices, and then sprinkle 1 teaspoon ground allspice evenly over the top. Repeat the layers.
- 5. Pour the white sauce over the layered ingredients, spreading it evenly. Bake in the preheated oven for 30 minutes, or until the top is golden and bubbling. Let cool slightly before serving.
