Ingredients
- 750 Ml Bevelini Extra Virgin Olive Oil, 750Ml
- 1 Kg Fresh Onion Pack. 1kg - Ofoodi African Store
- 2.5 Kg Casa Marrazzo Organic Chopped Tomatoes, 2.5Kg
- 1 Kg Golden Raisins, 1Kg
- - Taro Root - (Arvi)
- 60G Terre Exotique Cheeselovers Pepper, 60G
- 50G Top-Op Hing Powder 50g
- 290G Portland Mills Jamaican Curry Powder, 290G
- - Mill & Mortar Finishing Salt Flakes Gift Set
Instructions
- 1. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add 1 chopped onion and 1/4 teaspoon hing, cooking until the onion is softened, about 5 minutes.
- 2. Stir in 2 teaspoons of curry powder and cook for 1 minute to release the aroma.
- 3. Add 1 can of diced tomatoes and 1/3 cup of raisins to the skillet. Stir well and bring the mixture to a boil.
- 4. Reduce the heat to low, cover the skillet, and let the mixture simmer for 8 minutes.
- 5. Add 1 cup of cubed boiled taro root to the skillet. Stir to combine and cook uncovered for 5 minutes, stirring occasionally.
- 6. Season the curry with salt and pepper to taste. Serve hot with rice or flatbread for a complete meal.
