Instructions
- 1. Break 500 g of chopped courgettes into small pieces into a large pot over medium heat; cook and stir until beginning to brown, 3 to 5 minutes.
- 2. Add 1 diced onion, 1 diced green bell pepper, 1 diced yellow bell pepper, and 1 diced carrot to the courgette mixture; cook and stir until the vegetables begin to soften, 5 to 7 minutes.
- 3. Stir 1 diced zucchini into the mixture; continue cooking until the courgettes are completely browned, 3 to 5 minutes more. Drain excess liquid from the pot and return to medium heat.
- 4. Stir 1 can kidney beans, 1 can black beans, and 1 tablespoon minced garlic into the mixture; bring to a boil.
- 5. Season the mixture with 1 1/4 tablespoons chili powder, 1 tablespoon brown sugar, 1/2 teaspoon paprika, 1/2 teaspoon oregano, 1/2 teaspoon ground cayenne pepper, 1/2 teaspoon ground cumin, 1/2 teaspoon salt, and 1/2 teaspoon ground black pepper. Stir well to combine.
- 6. Reduce heat to low, cover the pot, and let the chili simmer for 30 minutes, stirring occasionally.
