Ingredients

  • Each Pepper Red- Each
  • 1 Kg Tomatoes 1kg
  • 1 Kg Red Onion 1kg
  • 1 Kg Wild Rice, 1Kg
  • 100 G Trs Ground Cumin Jeera Powder
  • 1 L Crisp N Dry Oil
  • 750 G Top-Op Table Salt Drums

Instructions

  1. 1. Preheat your oven to 350°F (175°C).
  2. 2. Cut the tops off the red peppers and remove the seeds and membranes inside.
  3. 3. Blanch the peppers in boiling water for 2 minutes, then immediately transfer them to ice water to cool. Set aside.
  4. 4. Cook 1 cup of wild rice according to the package instructions. Once cooked, set it aside.
  5. 5. In a large pan, heat 2 tablespoons of cooking oil over medium heat.
  6. 6. Add 1 finely chopped red onion to the pan and sauté until translucent, about 3-4 minutes.
  7. 7. Stir in 500g of chopped fresh tomatoes and cook until softened, about 5-7 minutes.
  8. 8. Add 2 teaspoons of ground cumin, 1 teaspoon of table salt, and 1/2 teaspoon of Greenfields Ground White Pepper to the tomato mixture. Stir well to combine.
  9. 9. Mix in the cooked wild rice and combine thoroughly with the tomato mixture. Adjust seasoning with additional salt and pepper, if needed.
  10. 10. Optional: If desired, fold in 1/2 cup of popped corn for added texture. Mix well.
  11. 11. Stuff each blanched pepper with the rice and tomato filling, pressing down gently to pack the mixture.
  12. 12. Place the stuffed peppers upright in a baking dish. Drizzle a small amount of cooking oil over the tops of the peppers.
  13. 13. Bake in the preheated oven for 25-30 minutes, or until the peppers are tender and slightly roasted on the edges.
  14. 14. Remove from the oven and let cool for a few minutes before serving.
