- 1 Kg Tomatoes 1kg
- 1 Kg Red Onion 1kg
- 1 Kg Wild Rice, 1Kg
- 100 G Trs Ground Cumin Jeera Powder
- 1 L Crisp N Dry Oil
- 750 G Top-Op Table Salt Drums
Instructions
- 1. Preheat your oven to 350°F (175°C).
- 2. Cut the tops off the red peppers and remove the seeds and membranes inside.
- 3. Blanch the peppers in boiling water for 2 minutes, then immediately transfer them to ice water to cool. Set aside.
- 4. Cook 1 cup of wild rice according to the package instructions. Once cooked, set it aside.
- 5. In a large pan, heat 2 tablespoons of cooking oil over medium heat.
- 6. Add 1 finely chopped red onion to the pan and sauté until translucent, about 3-4 minutes.
- 7. Stir in 500g of chopped fresh tomatoes and cook until softened, about 5-7 minutes.
- 8. Add 2 teaspoons of ground cumin, 1 teaspoon of table salt, and 1/2 teaspoon of Greenfields Ground White Pepper to the tomato mixture. Stir well to combine.
- 9. Mix in the cooked wild rice and combine thoroughly with the tomato mixture. Adjust seasoning with additional salt and pepper, if needed.
- 10. Optional: If desired, fold in 1/2 cup of popped corn for added texture. Mix well.
- 11. Stuff each blanched pepper with the rice and tomato filling, pressing down gently to pack the mixture.
- 12. Place the stuffed peppers upright in a baking dish. Drizzle a small amount of cooking oil over the tops of the peppers.
- 13. Bake in the preheated oven for 25-30 minutes, or until the peppers are tender and slightly roasted on the edges.
- 14. Remove from the oven and let cool for a few minutes before serving.
