Instructions
- 1. Preheat your oven to 350°F (175°C) and lightly grease a loaf pan with nonstick cooking spray or line it with parchment paper.
- 2. In a large mixing bowl, combine 2 cups of cooked lentils, 1 finely chopped onion, 1 grated carrot, 1 finely chopped celery stalk, and 1/4 cup finely diced bell pepper.
- 3. Add 1/2 cup finely chopped walnuts, 1 1/2 cups panko breadcrumbs, 1 cup unsweetened plant-based milk, 1 teaspoon salt, and 1 teaspoon dried oregano to the bowl. Mix everything thoroughly until well combined.
