Ingredients

  • 1 Kg Fresh Onion Pack. 1kg - Ofoodi African Store
  • 1 Kg Carrots - 1kg
  • 1kg 1kg Green Pepper
  • 560G Yorkshire Provender Rustic Vegetable Broth With Lentils Kale & Quinoa
  • 700G Navarrico Lentejas - Brown Lentils, 700G
  • 50G Pepper Black Ground BWFO
  • 500G White Pearl Italian Pudding Rice 500g
  • 250Ml Ktc Coconut Oil 250ml
  • 280G Caprichos Del Paladar Roasted Chopped Tomatoes, 280G

Instructions

  1. 1. In a large saucepan, heat 2 tablespoons of vegan butter over medium heat. Add 2 diced onions, 4 chopped carrots, and 1 diced green pepper. Saute for 5-7 minutes until the vegetables are softened.
  2. 2. Add 10 oz of vegetable broth and 2 cups of water to the saucepan. Bring the mixture to a boil.
  3. 3. Stir in 1 cup of lentils and 1/4 teaspoon of black pepper. Reduce the heat to low, cover, and let it simmer for 25 minutes.
  4. 4. Add 1/2 cup of rice to the saucepan and stir well. Cover and simmer for an additional 20 minutes, or until the rice is tender and the liquid is mostly absorbed.
  5. 5. Stir in 28 oz of canned diced tomatoes and cook for another 5 minutes, allowing the flavors to meld and the liquid to be fully absorbed.
  6. 6. Remove from heat, fluff with a fork, and serve warm as a wholesome dinner option.
