Ingredients

  • 100 G Jumbo Garlic 100g
  • 1 Pack Planet Organic G's Baby Leaf Spinach
  • - The Tofoo Co. Naked Tofu
  • 250 G Sempio Gochujang
  • 160 Ml Cj Bibigo Sesame Oil
  • NaN Tilda Long Grain Rice

Instructions

  1. 1. Press the tofu to remove excess moisture, then cut it into bite-sized cubes.
  2. 2. In a mixing bowl, whisk together 2 tablespoons of gochujang paste, 1 tablespoon of sesame oil, and 2 tablespoons of dark soy sauce. Add the tofu cubes and gently toss to coat. Let the tofu marinate for at least 15 minutes while preparing the other ingredients.
  3. 3. Mince 2 garlic cloves and slice the red bell pepper into thin strips. Set these aside.
  4. 4. Heat a non-stick pan over medium heat and add 1 teaspoon of sesame oil. Once warm, sauté the minced garlic for about 30 seconds, being careful not to burn it. Add the marinated tofu cubes and cook for 5-7 minutes, turning occasionally, until the tofu is golden and slightly crispy on the edges.
  5. 5. Add the sliced red bell pepper to the pan and stir-fry with the tofu for 3-4 minutes, or until the bell pepper is tender but still slightly crisp.
  6. 6. Stir in a handful of fresh spinach and cook for 1-2 minutes, just until the spinach wilts.
  7. 7. To serve, arrange the gochujang tofu mixture in a bowl. Top with slices of avocado and, if desired, a sprinkle of puffed rice for added texture.
  8. 8. Optional: Drizzle with additional soy sauce or sesame oil to taste. Serve hot and enjoy!
