Instructions
- 1. Heat 1 tablespoon of oil in a large skillet over medium heat. Add 1/2 cup diced onion, 1/2 cup diced green pepper, and 2 minced garlic cloves. Cook for 3 to 5 minutes, stirring occasionally, until the vegetables are tender.
- 2. Stir in 2 cups of vegetable broth, 1 diced tomato, 1 cup tomato sauce, 1/2 teaspoon Italian seasoning, 1/4 teaspoon cayenne pepper, and 1/8 teaspoon fennel seed. Bring the mixture to a boil.
- 3. Add 1 cup of rice to the skillet. Reduce the heat to low, cover, and simmer for 20 to 30 minutes, stirring occasionally, until the rice is tender and has absorbed most of the liquid.
- 4. Stir in 1 cup of cooked red beans and 1 cup of cooked butter beans. Cover and simmer for an additional 5 to 10 minutes, stirring occasionally, until the beans are heated through.
- 5. Remove from heat and let the dish rest for a few minutes before serving. Adjust seasoning to taste and serve warm.
