Ingredients

  • 1 Kg Fresh Onion Pack. 1kg - Ofoodi African Store
  • 1kg 1kg Green Pepper
  • 2.5 Kg Casa Marrazzo Organic Chopped Tomatoes, 2.5Kg
  • 960G Birds Eye Petits Pois
  • 500G White Pearl Italian Pudding Rice 500g
  • 250Ml Ktc Coconut Oil 250ml
  • - Tata Salt
  • 100G Heera Black Pepper Whole 100g
  • 420G Kingsford Corn Starch, 420G

Instructions

  1. 1. Cook 10 oz of frozen peas in boiling water until tender, then drain and set aside.
  2. 2. In a saucepan, melt 2 tbsp of coconut oil over medium heat. Add 1/4 cup of finely chopped onion and 1/4 cup of diced green bell pepper. Cook until softened but not browned, about 5 minutes.
  3. 3. Drain 8 oz of canned diced tomatoes, reserving the liquid. Add the tomatoes to the saucepan with the cooked onion and bell pepper.
  4. 4. Stir in the cooked peas, 1/2 teaspoon of salt, and a dash of black pepper. Mix well to combine.
  5. 5. In a small bowl, blend the reserved tomato liquid with 2 tsp of cornstarch until smooth. Gradually stir this mixture into the saucepan with the peas and vegetables.
  6. 6. Cook the mixture over medium heat, stirring constantly, until the sauce thickens and becomes bubbly, about 3-5 minutes.
  7. 7. Remove from heat and serve warm as a side dish or over rice for a complete meal.
