Ingredients
- 1 Kg Fresh Onion Pack. 1kg - Ofoodi African Store
- 1kg 1kg Green Pepper
- 2.5 Kg Casa Marrazzo Organic Chopped Tomatoes, 2.5Kg
- 960G Birds Eye Petits Pois
- 500G White Pearl Italian Pudding Rice 500g
- 250Ml Ktc Coconut Oil 250ml
- - Tata Salt
- 100G Heera Black Pepper Whole 100g
- 420G Kingsford Corn Starch, 420G
Instructions
- 1. Cook 10 oz of frozen peas in boiling water until tender, then drain and set aside.
- 2. In a saucepan, melt 2 tbsp of coconut oil over medium heat. Add 1/4 cup of finely chopped onion and 1/4 cup of diced green bell pepper. Cook until softened but not browned, about 5 minutes.
- 3. Drain 8 oz of canned diced tomatoes, reserving the liquid. Add the tomatoes to the saucepan with the cooked onion and bell pepper.
- 4. Stir in the cooked peas, 1/2 teaspoon of salt, and a dash of black pepper. Mix well to combine.
- 5. In a small bowl, blend the reserved tomato liquid with 2 tsp of cornstarch until smooth. Gradually stir this mixture into the saucepan with the peas and vegetables.
- 6. Cook the mixture over medium heat, stirring constantly, until the sauce thickens and becomes bubbly, about 3-5 minutes.
- 7. Remove from heat and serve warm as a side dish or over rice for a complete meal.
