Ingredients

  • 300G Pack'D Organic & Chopped Pineapple
  • - Sunita Lemon Juice Organic
  • - Desiccated Coconut 5 X 1kg
  • 1 Kg Tate & Lyle Granulated Sugar

Instructions

  1. 1. Cut a large pineapple lengthwise and scoop out the flesh, leaving the shell intact for serving if desired.
  2. 2. Dice the pineapple flesh into small cubes and place them in a mixing bowl.
  3. 3. In a small saucepan, combine 3 tablespoons of sugar, 2 tablespoons of lemon juice, and 50 ml of water. Heat gently until the sugar dissolves completely, then let the syrup cool.
  4. 4. Pour the cooled syrup over the diced pineapple and toss gently to coat.
  5. 5. Sprinkle 50 g of desiccated coconut over the pineapple mixture and stir lightly to combine.
  6. 6. Transfer the mixture into the hollowed-out pineapple shell or serving bowls. Chill in the refrigerator for at least 30 minutes before serving.
