  • - Kikkoman Soy Sauce
  • 187 Ml Pure Maple Syrup, 187Ml
  • 160 Ml Cj Bibigo Sesame Oil
  • 120 Ml Lee Kee Seasoned Rice Vinegar 120ml
  • - Ginger - 100g
  • 50G Black Garlic Cloves, 50G
  • 500G Biona Organic Long Grain Italian White Rice
  • 200G Biona Organic Edamame Beans
  • 1 Bunch Spring Onions 1 Bunch
  • 400G Whole Chickpeas In Water

Instructions

  1. 1. Press the tofu to remove excess water, then cut it into bite-sized cubes.
  2. 2. Mix soy sauce, maple syrup, sesame oil, rice vinegar, grated ginger, and minced garlic to create the teriyaki marinade.
  3. 3. Coat the tofu cubes in the marinade and let them sit for 15 minutes to absorb the flavors.
  4. 4. Cook the rice according to package instructions until fluffy and set aside.
  5. 5. Steam the edamame beans for 5-7 minutes until tender, then sprinkle with a pinch of salt.
  6. 6. Heat a non-stick pan over medium heat and add the marinated tofu cubes, reserving the leftover marinade.
  7. 7. Sear the tofu for 2-3 minutes on each side until golden brown and slightly crispy.
  8. 8. Add the reserved marinade to the pan and sprinkle in the cornstarch, stirring until the sauce thickens and coats the tofu.
  9. 9. Serve the tofu over a bed of rice, arranging steamed edamame on the side.
  10. 10. Garnish with chopped scallions and toasted sesame seeds for added flavor and texture.
