Instructions
- 1. Rinse masoor dal and rice thoroughly under running water and soak them for 20 minutes.
- 2. Chop tomatoes, onions, green chilies, and garlic finely for the base of the khichdi.
- 3. Heat ghee or oil in a large pot, add cumin seeds, and let them splutter for a few seconds.
- 4. Add chopped onions, garlic, and green chilies, and sauté until the onions turn golden brown.
- 5. Stir in the chopped tomatoes and cook until they soften and release their juices.
- 6. Add turmeric powder and salt, mixing well with the sautéed ingredients for even seasoning.
- 7. Drain the soaked dal and rice, then add them to the pot, stirring to coat them in the spice mixture.
- 8. Pour in water and bring the mixture to a boil over medium heat, stirring occasionally.
- 9. Reduce heat to low, cover the pot, and simmer until the dal and rice are fully cooked and tender.
- 10. Garnish the khichdi with freshly chopped coriander leaves before serving.
