Instructions
- 1. Rinse the prawns under cold water and pat them dry with paper towels.
- 2. In a bowl, mix coconut milk, lemon juice, garlic, ginger, curry blend, olive oil, salt, and pepper to create the marinade.
- 3. Add the prawns to the marinade and mix well, ensuring they are fully coated. Cover and refrigerate for 15 minutes.
- 4. While the prawns are marinating, rinse the rice under cold water until the water runs clear to remove excess starch.
- 5. In a medium saucepan, bring water to a boil, add a pinch of salt, and stir in the rice. Cook on low heat until water is absorbed and rice is tender.
- 6. Once the rice is cooked, fluff it with a fork, add chopped cilantro, and squeeze in the remaining lemon juice. Mix well and set aside.
- 7. Preheat the air fryer to 200°C for 5 minutes.
- 8. Arrange the marinated prawns in the air fryer basket in a single layer and cook for 8-10 minutes, flipping halfway through for even cooking.
- 9. While the prawns are cooking, steam the sliced carrots for 5 minutes or until tender but still slightly crisp.
- 10. Plate the lemon herb rice alongside the steamed carrots and fresh cucumber slices.
- 11. Once the prawns are fully cooked and slightly charred, arrange them on the plate and serve immediately.
