Instructions

  1. 1. Rinse the prawns under cold water and pat them dry with paper towels.
  2. 2. In a bowl, mix coconut milk, lemon juice, garlic, ginger, curry blend, olive oil, salt, and pepper to create the marinade.
  3. 3. Add the prawns to the marinade and mix well, ensuring they are fully coated. Cover and refrigerate for 15 minutes.
  4. 4. While the prawns are marinating, rinse the rice under cold water until the water runs clear to remove excess starch.
  5. 5. In a medium saucepan, bring water to a boil, add a pinch of salt, and stir in the rice. Cook on low heat until water is absorbed and rice is tender.
  6. 6. Once the rice is cooked, fluff it with a fork, add chopped cilantro, and squeeze in the remaining lemon juice. Mix well and set aside.
  7. 7. Preheat the air fryer to 200°C for 5 minutes.
  8. 8. Arrange the marinated prawns in the air fryer basket in a single layer and cook for 8-10 minutes, flipping halfway through for even cooking.
  9. 9. While the prawns are cooking, steam the sliced carrots for 5 minutes or until tender but still slightly crisp.
  10. 10. Plate the lemon herb rice alongside the steamed carrots and fresh cucumber slices.
  11. 11. Once the prawns are fully cooked and slightly charred, arrange them on the plate and serve immediately.
