Ingredients

  • 500G Ghee, 500G
  • 300G Natco Cashews, 300G
  • 1 Kg Trade Aid Caster Sugar 1kg
  • - Chicken Breakfast Sausages
  • 400 g Curd
  • 500G Besan (Gram Flour)
  • 250 ml Lemon Juice Concentrate
  • - Garlic Paste
  • 300 g Ginger Paste
  • - Red Chilli
  • 20 g Turmeric Powder
  • - Coriander Powder
  • 100 g Salt
  • 200 ml Mustard Oil
  • 1 Bunch Mint Leaves
  • 100 g Coriander Leaves
  • 250g Green Chilli
  • 50 g Cumin Powder
  • 1 kg Water Chestnuts

Instructions

  1. 1. Cut the chicken thigh fillets into bite-sized pieces and pat dry with a paper towel.
  2. 2. In a bowl, mix hung curd, gram flour, lemon juice, garlic paste, ginger paste, red chili powder, turmeric, cumin, coriander powder, and salt to make the marinade.
  3. 3. Add the chicken pieces to the marinade, coating them evenly, and let it rest for 20 minutes.
  4. 4. Thread the marinated chicken onto skewers, ensuring even spacing for uniform cooking.
  5. 5. Heat oil in a grill pan or tawa over medium heat and place the skewers on it.
  6. 6. Cook the chicken skewers for 10-12 minutes, turning occasionally until they are golden brown and cooked through.
  7. 7. While the chicken cooks, blend mint leaves, coriander leaves, green chilies, roasted cumin powder, salt, and water into a smooth chutney.
  8. 8. Serve the hot chicken skewers with the refreshing mint chutney on the side.
