Frequently asked questions
- How long does Sweet and Sour Tofu with Vegetable Fried Rice take to make?
- About 45 minutes in total: 15 minutes of prep for pressing the tofu and chopping vegetables, then 30 minutes of cooking.
- Is Sweet and Sour Tofu with Vegetable Fried Rice vegetarian?
- Yes, it is vegetarian: crispy tofu in a ketchup, rice vinegar, soy and brown sugar sauce, served over jasmine fried rice with vegetables.
- How do I get the tofu crispy for sweet and sour?
- Press out as much water as possible, toss the cubes in cornflour, and fry them in hot oil until golden before they meet the sauce. Simmer them in the sauce only briefly so the coating stays crisp.
- Why use cooked, cooled rice for fried rice?
- Cooled rice is drier, so the grains stay separate and fry rather than steam. Day-old jasmine rice from the fridge is ideal; freshly cooked rice tends to clump in the wok.
- How can I make the sweet and sour sauce tangier?
- Add an extra splash of rice vinegar, or more brown sugar and ketchup if you prefer it sweeter. Taste and adjust the sauce before pouring it over the tofu.
