Sweet and Sour Quinoa Stir-Fry recipe

Ingredients

  • 100 G Jumbo Garlic 100g
  • 1 Kg Fresh Onion Pack. 1kg - Ofoodi African Store
  • 1kg 1kg Green Pepper
  • 250 ml Critida Lemon Infused Olive Oil 250Ml
  • 300G Pack'D Organic & Sweet Chopped Mango
  • - Forest Whole Foods Organic White Quinoa
  • 240G Lee Kum Kee Sweet & Sour Sauce, 240G

Instructions

  1. 1. Place a wok over high heat and add 2 tablespoons of cooking oil when hot.
  2. 2. Add 1 diced onion and 1 minced clove of garlic to the wok. Stir-fry until the onion is translucent and softened, about 4 minutes. Remove the mixture from the wok and set aside.
  3. 3. Add 1 tablespoon of cooking oil to the wok. When hot, add 1 diced onion and 1 sliced green pepper. Stir-fry for 1 minute until slightly softened.
  4. 4. Return the cooked onion and garlic mixture to the wok and add 1 pack of chopped mango along with 1 cup of sweet and sour sauce. Stir well and cook until the sauce boils and thickens, about 1-2 minutes.
  5. 5. Serve the stir-fry over a bed of 4 cups of cooked quinoa. Enjoy your halal sweet and sour stir-fry!
