  • 2.5 Kg Casa Marrazzo Organic Chopped Tomatoes, 2.5Kg
  • 1 Kg Red Onion 1kg
  • 100G Sichuan Pepper, 100G
  • 375 ml Capirete 20 Years Sherry Vinegar 375Ml

Instructions

  1. 1. Bring a small pot of salted water to a boil. Skip the step involving fresh beans. Proceed directly to the next step.
  2. 2. In a large skillet, cook 4 slices of turkey bacon over medium heat until crisp. Remove the bacon and place it on a paper towel to drain. Add 1 1/2 tablespoons of olive oil to the skillet and heat over medium.
  3. 3. Add 1 diced red onion to the skillet and cook until softened, about 4-5 minutes. Stir in 2 minced garlic cloves and cook for an additional minute.
  4. 4. Add 3/4 cup diced tomatoes and 1 tablespoon of sherry vinegar to the skillet. Cook, stirring often, until the tomatoes just begin to soften and release their juices. Season with salt and Sichuan pepper to taste.
  5. 5. Remove the skillet from heat and stir in half of the crispy turkey bacon. Allow the mixture to cool slightly, then gently fold in 1/4 cup chopped fresh basil. Adjust seasoning with additional salt, Sichuan pepper, or sherry vinegar if needed.
  6. 6. Toast 6 slices of ciabatta. Cut 1 garlic clove in half and rub the cut side over the warm toasted bread. Drizzle each slice with a little olive oil.
  7. 7. Spoon the mixture over the toasted bread slices and top with the remaining crispy turkey bacon. Serve immediately.
