Ingredients
- 1 Bunch Spinach Fresh 1 Bunch
- 400G Sabarot Chia Seeds, 400G
- 1.5 Kg Best In Plain Flour 1.5 Kg
- 250 ml Critida Lemon Infused Olive Oil 250Ml
- 60G Mill & Mortar Organic Salt Of Hearts, 60G
Instructions
- 1. Thaw the frozen spinach and squeeze out any excess liquid. Pulse the spinach in a food processor until finely chopped.
- 2. In a large mixing bowl, combine 1 2/3 cups of flour, 1/4 cup of chia seeds mixed with 1/2 cup of water, 1 tablespoon of olive oil, 1/2 teaspoon of salt, and the processed spinach. Use an electric hand mixer with dough-hook attachments on medium speed to mix until the dough comes together.
- 3. Transfer the dough to a floured surface and knead it by hand until smooth and elastic, about 8 to 10 minutes. Add more flour as needed to prevent sticking. Wrap the dough in plastic wrap and let it rest for 15 minutes.
- 4. Divide the dough into two portions. Roll out one portion at a time on a floured surface until very thin. Cut the dough into 1-inch-wide strips, then slice the strips into 1 1/2-inch rectangles. Pinch the centers of each rectangle to form bow-tie shapes. Place the pasta on a floured towel or wire rack and let it dry for 24 hours.
- 5. Bring a large pot of salted water to a boil. Cook the dried bow-tie pasta for about 5 minutes or until al dente. Drain and serve with your favorite sauce for a delicious dinner.
