Instructions
- 1. Rinse the quinoa thoroughly under cold water and set aside.
- 2. In an air fryer-safe pan, heat olive oil and sauté minced garlic and ginger until fragrant.
- 3. Add chopped carrots, bell peppers, and broccoli to the pan and cook for 5 minutes until slightly tender.
- 4. Stir in the green peas and continue cooking for an additional 3 minutes.
- 5. Mix turmeric powder, cumin powder, red chili powder, and salt into the vegetables.
- 6. Add the rinsed quinoa and coconut milk to the pan, stirring well to combine.
- 7. Cook in the air fryer at 180°C for 15 minutes, stirring occasionally to ensure even cooking.
