Instructions

  1. 1. Rinse the rice under cold water until clear, then cook it in a rice cooker with 1.5 cups of water until fluffy.
  2. 2. Press the tofu to remove excess moisture, then cut it into bite-sized cubes.
  3. 3. Heat olive oil in a pan over medium heat, and sauté tofu cubes until golden and crispy on all sides, about 6-8 minutes.
  4. 4. Slice the carrot and zucchini into thin matchsticks and set aside.
  5. 5. Blanch the spinach in boiling water for 1 minute, then drain and squeeze out excess water.
