Instructions

  1. 1. In a small piece of cheesecloth, combine 2 heaping teaspoons of ground mustard, 2 teaspoons of ground cinnamon, and 1 teaspoon of ground ginger. Tie the cloth securely to form a spice pouch.
  2. 2. Scald 2 cans of chopped tomatoes in boiling water for 1-2 minutes, then transfer them to an ice bath. Peel off any skins and chop the tomatoes into small pieces.
  3. 3. Finely chop 6 medium onions and 4 green chillies (use gloves to handle the chillies safely).
  4. 4. In a large pot, combine the chopped tomatoes, onions, and green chillies. Add 1/4 cup of sugar, 1/4 cup of salt, and 4 cups of vinegar. Stir well to combine.
  5. 5. Place the spice pouch into the pot and bring the mixture to a boil over medium heat. Reduce the heat to low and simmer uncovered for about 3 hours, stirring occasionally, until the mixture thickens.
  6. 6. Remove the spice pouch and discard it. Let the relish cool slightly before transferring it to sterilized jars. Seal and store in the refrigerator or process for long-term storage. Serve with your favorite vegetables.
