- 1 Kg Red Onion 1kg
- 50G Black Garlic Cloves, 50G
- - Ginger - 100g
- 100 g Wijaya Coriander Seeds 100G
- 100 G Trs Ground Cumin Jeera Powder
- - Greenfields Ground Coriander
- - Jalpur Red Chilli Powder Fine
- - Greenfields Black Peppercorns
- 450G Rice Flour, 450G
- 1 Piece Cucumber 1Pc
- 500 G Fresh Vine Tomato 500g
- 25G Natco Mint
- 380G Fage Fruits Coconut
- - PLJ Lemon Juice Original Sharp 500ml
- 1 L Olive Oil – Organic
Instructions
- 1. Finely chop the red onion, garlic, ginger, and coriander leaves, setting aside small portions of coriander for garnish.
- 2. In a mixing bowl, combine ground lamb, chopped onion, garlic, ginger, coriander, ground cumin, coriander powder, chili powder, salt, black pepper, and rice flour.
- 3. Mix the lamb mixture thoroughly with your hands until well combined, then shape into small cylindrical koftas.
- 4. Heat olive oil in a skillet over medium heat and cook the koftas for 10-12 minutes, turning frequently until browned and cooked through.
- 5. While the koftas cook, dice the cucumber and tomato into small cubes, and prepare the minted yogurt by mixing coconut yogurt with finely chopped mint and lemon juice.
- 6. Warm the flatbreads in a dry skillet for 1-2 minutes on each side until pliable.
- 7. Assemble the wraps by layering cucumber, tomato, and koftas on the flatbreads, then drizzle generously with the minted yogurt sauce.
- 8. Garnish with the reserved coriander leaves and fold the flatbreads to enclose the filling.
- 9. Serve immediately, enjoying the balance of spiced lamb and refreshing yogurt.
