Instructions
- 1. Cut the Rohu fish fillet into medium-sized pieces and set aside in a bowl.
- 2. Mix yogurt, turmeric powder, red chili powder, ginger-garlic paste, lemon juice, and salt to make a marinade.
- 3. Coat the fish pieces thoroughly with the marinade and let them rest for 20 minutes.
- 4. Wash the basmati rice and soak it in water for 15 minutes.
- 5. Heat 1 tablespoon of vegetable oil in a pan and toast the cumin seeds until aromatic.
- 6. Add the soaked rice to the pan and stir gently, then pour 300 ml of water and bring it to a boil.
- 7. Lower the heat, cover the pan, and let the rice cook until all the water is absorbed, about 12 minutes.
- 8. Heat the remaining 1 tablespoon of oil in a separate pan and add the marinated fish pieces.
- 9. Cook the fish on medium heat for 5 minutes on each side until golden brown and cooked through.
- 10. Serve the cumin rice on a plate, topped with the spiced fish tikka.
- 11. Garnish with freshly chopped coriander leaves before serving.
