Ingredients
- Black Beans 1 Kg Feijao Preto, Black Beans 1Kg
- 100 G Jumbo Garlic 100g
- 1 Kg Yellow/White Onion 1kg
- 140G Doritos Chilli Heatwave Tortilla Chips Sharing Bag Crisps 140g
- 400G Italianavera Cherry Tomatoes In Botanical Tin, 400G
- - Petti Delicato Extra Fine Passata
- NaN Bute Island Cheddar Flavour Block
- NaN Mcdougalls Plain Flour
Instructions
- 1. Preheat your oven to 350°F (175°C).
- 2. Place an oven bag in a 13 x 9-inch baking dish. Add 2 tablespoons of flour to the bag, twist the end, and shake to coat the inside.
- 3. Add 2 cups of passata to the bag. Squeeze the bag gently to mix the tomatoes.
- 4. Add 2 cups of black beans, 1 diced onion, and 2 minced garlic cloves to the bag. Arrange the ingredients in an even layer.
- 5. Close the oven bag with a nylon tie and cut six 1/2-inch slits in the top of the bag to allow steam to escape.
- 6. Bake in the preheated oven for 40 minutes, or until the flavors are well combined.
- 7. Carefully open the oven bag and sprinkle 2 cups of shredded cheddar cheese over the mixture. Let it sit for a few minutes to melt.
- 8. Serve the black bean mixture over a bed of tortilla chips and garnish with fresh tomato slices, if desired.
