Instructions
- 1. In a small bowl, mix smoked paprika, ground cumin, chili powder, garlic powder, salt, and pepper to create a spice rub.
- 2. Pat the steak dry, rub the spice mixture evenly onto both sides, and let it marinate for 15-20 minutes while you prepare the vegetables.
- 3. Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the sliced bell peppers and green chili, cooking for 5-7 minutes until softened and slightly charred. Remove from the skillet and set aside.
- 4. In the same skillet, heat the remaining 1 tablespoon of oil over high heat. Sear the steak for 3-4 minutes on each side for medium-rare, or adjust cooking time based on your preferred doneness. Remove from the skillet and let it rest for 5 minutes before slicing thinly against the grain.
- 5. Warm the tortillas in a dry skillet or microwave until pliable. If using lettuce, prepare the leaves for serving.
- 6. Assemble the tacos by placing steak slices and sautéed peppers onto each tortilla. Squeeze lime juice over the filling for added brightness.
- 7. Serve immediately with optional lettuce for added crunch or additional chili for extra spice.
